I’m all mixed up in my head right now. I can’t explain everything.

I’m unsure and sure at the same time. I regret nothing but have learned so much.

I’m not one to dwell, but some things I can’t let go of yet. They’re unfinished. Some things are absolutely finished and saying goodbye to them is amazing.

Banana Sushi

Oh. My. Yummy.

Banana sushi is AMAZING! Now, I added pistachios to it because I THOUGHT hubs would be eating it too. I CAN’T eat a bunch of nuts! Anyway, you should ABSOLUTELY try this!  Here is the recipe of what I used:

1 banana

Almond butter



I peeled the banana, spread almond butter on one side of the banana, sprinkled with cinnamon, & topped with nuts.

It was SO GOOD! If you try it out, let me know your thoughts!

The “Miss Dish” Recipe


It’s seriously delicious!

Fight For It - Silver Linings

This recipe had been named “The Miss Dish!”


Non-stick cooking spray (I used Pam)
4 – 5 tablespoons olive oil
1 pound boneless, skinless chicken breasts, cut in half (or buy thin-sliced chicken)
1 pound fresh asparagus, washed & ends trimmed
1 package mushrooms, washed & cut
1 teaspoon sea salt
1 teaspoon Italian seasoning mix
1/2 teaspoon pepper
1/2 teaspoon garlic powder
1 lemon, sliced
2 tablespoons butter, cubed


Preheat oven to 425 degrees.

Line a baking sheet with heavy duty aluminum foil. Spray with non-stick cooking spray.

Arrange chicken breasts, asparagus & mushrooms on the pan & coat with olive oil. Season with sea salt, dried herbs, pepper & garlic powder. Place lemon slices over chicken, asparagus & mushrooms.

Bake for 15 minutes, then add butter over chicken, asparagus & mushrooms.

Bake for additional 5 minutes or until chicken reaches internal temperature of 165 degrees, according…

Carrot cake, one of the most loved yet strange cakes to find in a cafe.

Who ever first thought of putting carrots into a cake? It’s beyond me but my goodness, it works so well.

One Pan Lemon Parmesan Chicken & Asparagus


Tonight’s dinner!

1 & 1/2 lbs boneless, skinless chicken breasts or tenders
1/3 cup flour
1 cup panko*
1 cup parmesan cheese
1 tsp dried parsley
1/2 tsp garlic powder
3-4 lemons
1 tbsp minced garlic
8 tbsps melted butter
1 tbsp lemon pepper seasoning
1 pound asparagus
3 tbsps olive oil
1 sliced lemon & fresh parsley for topping

Preheat oven to 400° F. Line a large sheet pan with parchment paper/foil & set aside.

Grab three bowls & add the flour to one bowl.

Combine the panko, 1/2 cup of the freshly grated parmesan cheese, dried parsley, garlic powder, & about 1/2 teaspoon each of salt & pepper. Stir. Set aside.

In the final bowl, add 1-2 teaspoons lemon zest, 4-5 tablespoons lemon juice (depending on lemon flavor intensity desired), minced garlic, & 5 tablespoons melted butter. Stir. Remove 4 tablespoons of this mixture & set aside…
