Shrimp Boil

Standard

Ingredients:

2 lbs small potatoes red or yellow (I used red)

4 cups low-sodium chicken broth or stock

1 lb turkey meatballs cut in half

4 ears fresh corn husked & quartered

2-3 tbsp Old Bay seasoning

1/2 tsp cayenne pepper more or less depending on taste (I didn’t use, due to health issues)

2 lbs large shrimp

4 tbsp butter melted

2 tbsp chopped parsley

Optional:

cocktail sauce for dipping

lemon wedges

Instructions:

Cut larger potatoes in half, should be bite size.

Place potatoes in 6 or 7 quart slow cooker.

Add chicken broth.

Top with meatballs & sprinkle on Old Bay seasoning & cayenne.

Add the corn quarters on top.

Cover & cook on low for 7 to 8 hours (3 to 4 hours on high).

Turn the slow cooker to high & gently add the shrimp & stir into mixture.

Cover & cook for an additional 10 minutes or until the shrimp are opaque.

Use a slotted spoon to transfer the shrimp boil to a large bowl or serving container. Drizzle some of the cooking liquid over the top.

Combine the melted butter & parsley, then drizzle over the top & toss gently.

Serve with lemon wedges & cocktail sauce.

I’m unsure and sure at the same time. I regret nothing but have learned so much.

I’m not one to dwell, but some things I can’t let go of yet. They’re unfinished. Some things are absolutely finished and saying goodbye to them is amazing.

Banana Sushi

Oh. My. Yummy.

Banana sushi is AMAZING! Now, I added pistachios to it because I THOUGHT hubs would be eating it too. I CAN’T eat a bunch of nuts! Anyway, you should ABSOLUTELY try this!  Here is the recipe of what I used:

1 banana

Almond butter

Cinnamon

Pistachios

I peeled the banana, spread almond butter on one side of the banana, sprinkled with cinnamon, & topped with nuts.

It was SO GOOD! If you try it out, let me know your thoughts!

The “Miss Dish” Recipe

Fight For It - Silver Linings

This recipe had been named “The Miss Dish!”

Non-stick cooking spray (I used Pam)
4 – 5 tablespoons olive oil
1 pound boneless, skinless chicken breasts, cut in half (or buy thin-sliced chicken)
1 pound fresh asparagus, washed & ends trimmed
1 package mushrooms, washed & cut
1 teaspoon sea salt
1 teaspoon Italian seasoning mix
1/2 teaspoon pepper
1/2 teaspoon garlic powder
1 lemon, sliced
2 tablespoons butter, cubed

Do:

Preheat oven to 425 degrees.

Line a baking sheet with heavy duty aluminum foil. Spray with non-stick cooking spray.

Arrange chicken breasts, asparagus & mushrooms on the pan & coat with olive oil. Season with sea salt, dried herbs, pepper & garlic powder. Place lemon slices over chicken, asparagus & mushrooms.

Bake for 15 minutes, then add butter over chicken, asparagus & mushrooms.

Bake for additional 5 minutes or until chicken reaches internal temperature of 165 degrees, according…

I’m chronically ill. I have multiple incurable ailments. I’m “disabled.” I KNOW my life will NEVER be like what I planned for it to be. But even so, I refuse to stop dreaming. That’s not me. That’s not who I am or how I roll. I dream always. I’ll never stop. To all of my fellow chronically ill people out there, NEVER STOP FIGHTING.
