I found this amazing recipe & even though it isn’t something I can’t personally eat (because of tummy issues versus ingredients), it wad too amazing NOT to share! Oug anyone tries it, let me know!

Skinny Chicken Fajita Salad

Yield: Serves 2

Need:
1 tablespoon olive oil
1 boneless skinless chicken breast
1 red bell pepper, sliced
1 green bell pepper, sliced
1 small onion, sliced
½ teaspoon salt
1 teaspoon chili powder
1 teaspoon ground cumin
1 teaspoon garlic powder
1 head romaine lettuce, chopped
1 avocado, sliced

Dressing:
1 tablespoon olive oil
3 tablespoons lime juice
2 teaspoons soy sauce
1 to 2 teaspoons brown sugar
1 teaspoon red pepper flakes

Do:
Pour 1 tablespoon of olive oil into a large skillet. Heat over medium-high heat. Add in the chicken breast on one side & the bell peppers & onion on the other side. Sprinkle the whole skillet with salt, chili powder, cumin, & garlic powder. Toss the peppers & onions occasionally & let saute 3-5 minutes. Flip chicken & continue cooking another 3-5 minutes (tossing peppers occasionally) until the chicken is cooked through. Remove the pan from the heat & slice the chicken. In a small bowl, whisk together remaining olive oil, lime juice, soy sauce, brown sugar, & red pepper flakes. Compile two individual salads, or one big salad by adding chopped romaine lettuce to a bowl or plates. Add chicken, peppers & onions, & avocado slices. Drizzle dressing on top.

Everyone else seems to have these amazing plans & things to look forward to. But here I am, meeting with my disability lawyer, juggling appointments & feeling atrocious. I literally cannot think of one thing I’m genuinely looking forward to.

I am so incredibly happy for everyone & I wish them NOTHING but amazingness! I just wish I could get a little bit of that amazing sprinkled on me.

Things are just steadily getting worse for me & it’s so much to take on. I’m overall worn out. I really don’t to start throwing myself pity parties though.

Need:

FAJITAS:
1 pound boneless skinless chicken breasts cut into strips (about 3 chicken breast halves)
1 onion, sliced
5-6 cups sliced bell peppers
(about 3 peppers)
1 10 oz can of diced tomatoes with chiles (mild or hot)
2 teaspoons chili powder
1/2 teaspoon cumin
1/4 teaspoon seasoning salt
1 tablespoon olive oil
black pepper to taste
lime
flour or corn tortillas for serving

OPTIONAL TOPPINGS:
Cheese
Sour cream
Lettuce
Cilantro
Salsa
Jalapeno peppers

Do:
Preheat oven to 425°F. Drain tomatoes well. Stir together chicken, onion, diced tomatoes, chili powder, cumin, seasoning salt, olive oil & pepper. Place in a 9×13 pan & bake 15 minutes. Remove from oven & stir in bell peppers. Bake an additional 10 minutes. Remove from oven & squeeze lime over the mixture. Meanwhile, heat tortillas according to package directions. Serve chicken mixture in tortillas with desired toppings.

Non-stick cooking spray (I used Pam)
4 – 5 tablespoons olive oil
1 pound boneless, skinless chicken breasts, cut in half (or buy thin-sliced chicken)
1 pound fresh asparagus, washed & ends trimmed
1 package mushrooms, washed & cut
1 teaspoon sea salt
1 teaspoon Italian seasoning mix
1/2 teaspoon pepper
1/2 teaspoon garlic powder
1 lemon, sliced
2 tablespoons butter, cubed

Do:

Preheat oven to 425 degrees.

Line a baking sheet with heavy duty aluminum foil. Spray with non-stick cooking spray.

Arrange chicken breasts, asparagus & mushrooms on the pan & coat with olive oil. Season with sea salt, dried herbs, pepper & garlic powder. Place lemon slices over chicken, asparagus & mushrooms.

Bake for 15 minutes, then add butter over chicken, asparagus & mushrooms.

Bake for additional 5 minutes or until chicken reaches internal temperature of 165 degrees, according…

1 box KC Masterpiece® BBQ Sauce & Dry Rub , Sweet Honey
1 3/4 cup pineapple juice, divided
4 large boneless skinless chicken breasts
1 cup mushrooms, halved
1 red bell pepper
1 orange bell pepper
1 cup diced pineapple
1 green bell pepper
1 purple onion

Do:

Pineapple Honey BBQ Sauce

Combine 3/4 pineapple juice and 1 pouch KC Masterpiece® BBQ Sauce & Dry Rub. Set aside.

Hawaiian Skewers

Cut chicken into bite sized pieces. In a large zipper bag combine 1 cup pineapple juice and 1 pouch KC Masterpiece® BBQ Sauce & Dry Rub and chicken. Marinate 30 minutes. Preheat grill to medium high. Thread chicken and vegetables onto skewers and brush with BBQ Sauce. Grill 12-16 minutes or until cooked through.
