Cilantro Lime Chicken


Oh my goodness! This chicken was AMAZING! You should absolutely try it out & report back!


2-3 boneless, skinless, chicken breast

Extra Virgin Olive Oil (EVOO)



Black pepper

Lime Juice

Lemon juice






Preheat oven to 400°F.

Cover a cookie sheet with one layer of foil & lightly coat with some non-stick cooking spray (I use PAM).

I cut my chicken in half to make them thinner. You don’t have to, but I think it worked out well.

Regarding the ingredients, it comes to a matter of taste. If you want it super garlicky, use more garlic. Here’s a guesstimate of what I used!

1/4 cup of chopped cilantro

Juice of 2 limes & 1 lemon

2 cloves of minced garlic

A pinch of salt, pepper, garlic, onion, & paprika. A pinchlet (not a real word 😂) of sugar.

Combine all wet ingredients together in one bowl & all dry ingredients in another bowl.

Lightly coat each piece of chicken with wet mixture (both sides). Then coat each piece of chicken with the remaining combined ingredients (both sides).

Place on foil covered cookie sheet & place in the oven. Bake for about 20 minutes.
